Naval battles - I still don't know how to do them.

I once successfully defended as the French against 3 successive massive armies by having my troops on a hill, putting my cannons above my infantry so they were defended but always had clean lines of fire. If you can get forces on a hill, multiple units can fire over the heads of others. For example, Poland's light lancers (I think they're called Uhlans) can absolutely smash enemy line infantry if used correctly (engage with infantry while cavalry moves behind enemy lines and charge from behind/the side).

Don't underestimate the power of cavalry.

Time it right with multiple cannons, canister shot, and short range and you can deal a deadly blow to morale and turn a battle.

Artillery is powerful, especially with canister/exploding shot.
